Pasta Salad

- Cook your pasta in a large pot of salted water according to the
package directions for al dente. Drain and rinse with cold water
immediately to stop the cooking process and prevent sticking.
- In a small jar or bowl, combine the olive oil, lemon juice, minced
garlic, and oregano. Shake or whisk until emulsified. Add a pinch of
salt and pepper to taste.
- In a large mixing bowl, toss the cooled pasta with the tomatoes,
cucumber, red onion, and olives.
- Add the feta cheese and the cubed avocado. Pro tip: Wait until the
very end to add the avocado to prevent it from getting too “mushy” while
tossing.
- Pour the dressing over the salad and gently toss until everything is
coated. Top with fresh parsley.
