Pasta Salad

  1. Cook your pasta in a large pot of salted water according to the package directions for al dente. Drain and rinse with cold water immediately to stop the cooking process and prevent sticking.
  2. In a small jar or bowl, combine the olive oil, lemon juice, minced garlic, and oregano. Shake or whisk until emulsified. Add a pinch of salt and pepper to taste.
  3. In a large mixing bowl, toss the cooled pasta with the tomatoes, cucumber, red onion, and olives.
  4. Add the feta cheese and the cubed avocado. Pro tip: Wait until the very end to add the avocado to prevent it from getting too “mushy” while tossing.
  5. Pour the dressing over the salad and gently toss until everything is coated. Top with fresh parsley.
