Jisoβs Savory Beef & Aubergine Stir-Fry
π§βπ³ Mise en place
π Rice, rinsed and ready to boil
π Aubergine, cut into bite-sized cubes
π§ Onion, sliced into thin half-moons
π₯© Ground Beef, room temperature
π« Soy Sauce & Oyster Sauce, whisked together (2:1 ratio)
π« Olive Oil, for the pan
π³ Instructions
Start the rice following package instructions so itβs ready for serving.
Heat olive oil in a pan and sautΓ© aubergine cubes until soft and browned; remove and set aside.
In the same pan, brown the ground beef and onions together until meat is cooked through.
Return the aubergine to the pan and pour over the sauce mixture.
Toss on high heat for 1β2 minutes until the sauce is thick and glossy.
Serve hot over the prepared rice.
Pro tip: serve with a
boiled egg
