Easy Red Lentil Dahl

🧑‍🍳 Ingredients

• 🧅 1 large onion, finely chopped
• 🧄 3 cloves garlic, minced
• 🍅 1 can (400g) chopped tomatoes
• 🌶️ 1 tbsp turmeric
• 🥥 1 can (400ml) coconut milk or 200ml coconut cream
• 🌱 2 tsp ground cumin
• 🧂 2 tsp garam masala
• 🫘 1 cup (200g) red split lentils, rinsed
• 🧊 1 vegetable bouillon cube
• 💧 2 cups (500ml) water or vegetable broth
• 🍋 1 tbsp lemon juice
• 🧂 Salt and pepper, to taste

🍳 Instructions

• Add olive oil to a large pan over medium heat.
• Add onions and stir until translucent (about 5 minutes).
• Add garlic, turmeric, cumin, and garam masala; cook for 1 minute until fragrant.
• Add red split lentils, vegetable bouillon cube, and water/broth. Let simmer for 10 minutes.
• Add coconut milk or cream and stir well.
• Simmer for another 10 minutes, stirring occasionally.
• Add chopped tomatoes and cook for 5 more minutes.
• Add lemon juice, salt, and pepper to taste.
• Serve with rice or naan bread.
