- Pour in the heavy cream and bring to a gentle simmer.
- Crumble in the blue cheese and stir until melted into the sauce.
- Season with salt and pepper to taste.
- Cook the gnocchi according to package instructions (usually 2-3 minutes until they float).
- Drain the gnocchi and add directly to the sauce.
- Gently toss to coat the gnocchi in the creamy sauce.
- Serve immediately, topped with fresh grated parmesan if desired.
