Creamy Blue Cheese & Spinach Gnocchi

  1. Bring a large pot of salted water to boil for the gnocchi.
  2. Heat olive oil in a large pan over medium heat.
  3. Add the diced onion and cook until translucent, about 3-4 minutes.
  4. Add minced garlic and cook for another minute until fragrant.
  5. Add the spinach in batches, stirring until wilted.
  6. Pour in the heavy cream and bring to a gentle simmer.
  7. Crumble in the blue cheese and stir until melted into the sauce.
  8. Season with salt and pepper to taste.
  9. Cook the gnocchi according to package instructions (usually 2-3 minutes until they float).
  10. Drain the gnocchi and add directly to the sauce.
  11. Gently toss to coat the gnocchi in the creamy sauce.
  12. Serve immediately, topped with fresh grated parmesan if desired.
